Tasty Tuscan Chicken Pasta: A Delicious New Twist on Pasta Night

My family loves a good pasta dish, so I enjoy experimenting with new variations on Italian and chicken pasta recipes. This Tuscan chicken pasta is a delicious new twist that might quickly become a favorite.

Typically, I'd use chicken tenderloins for a pasta like this, but this time I decided to go with full chicken breasts instead. And rather than our usual fettuccine or bowtie pasta, I opted for extra wide egg noodles. These small substitutions gave my usual chicken pasta a fresh new feel. I also switched up the veggies, using spinach and cherry tomatoes instead of my go-to broccoli or bell peppers. The bright pops of color from the tomatoes and the hearty greens of the spinach make this dish extra appetizing. Plus, the spinach and tomatoes pair beautifully with the rich, creamy sauce.

The end result is a comforting and satisfying pasta that's perfect for a busy weeknight. The creamy tuscan-inspired sauce coats each strand of noodle, with tender bites of chicken throughout. It's a balanced meal the whole family loves. Here’s how you can recreate this”

Ingredients:

- Chicken breasts (1 per person)

- 1 bag fresh spinach

- 1 cup cherry tomatoes

- Heavy cream

- Freshly grated parmesan cheese

- Salt

- Tabitha Brown x McCormick Sunshine Seasoning

- Kinder's Chicken Seasoning

- Extra wide egg noodles

Instructions:

1. Wash the chicken breasts and season them generously with Kinder's Chicken Seasoning.

2. Heat a skillet over medium-high heat with a drizzle of olive oil. Cook the chicken all the way through, about 6-8 minutes per side. Remove the chicken from the pan and set aside.

3. While the chicken is cooking, bring a pot of salted water to a boil and cook the extra wide egg noodles per package instructions. Drain and set aside.

4. In the same skillet used for the chicken, sauté the cherry tomatoes and fresh spinach for 2-3 minutes until the spinach is wilted.

5. Add the cooked chicken back to the pan with the tomatoes and spinach. Pour in the heavy cream and stir to combine.

6. Toss in the cooked egg noodles and season with salt and Tabitha Brown Sunshine Seasoning to taste.

7. Allow the sauce to simmer for 2-3 minutes until thickened.

8. Remove from heat and sprinkle freshly grated parmesan cheese on top.

9. Serve immediately and enjoy!
